My grandma saw me cooking in a cast iron pan, and she looked horrified — like I just tried to wash it with soap (don’t ever do that either, by the way). She shook her head and said, “You don’t cook that in a cast iron, honey!”
That’s when I realized — cast iron pans are amazing, but they’re not made for everything. So I asked her what I should avoid, and she gave me the look — you know, the “I raised you better” look — and then listed these three:
Tomato–Based Sauces
I know — spaghetti sauce in a pan sounds easy, right? But grandma was right. Tomatoes are super acidic, and when they cook in cast iron, they can react with the metal.
This not only gives your food a strange metallic taste, but it can also damage the pan’s seasoning (that protective layer that makes it non-stick). So, it’s better to use a stainless steel or non-stick pan for those saucy meals.
Fish
Fish is delicate and tends to stick to the pan — especially flaky ones like tilapia or cod. Even worse, the strong smell of fish can cling to your cast iron pan and affect the flavor of your next meal. Unless your pan is really well-seasoned or you’re cooking something like salmon with the skin on, it’s best to cook fish elsewhere.
Sticky Desserts
Thinking of baking a gooey cinnamon roll or a sticky caramel cake in your cast iron? Hold up! Sugar can burn easily and leave a tough residue that’s hard to clean — and you don’t want to scrub too hard because it could strip off the pan’s seasoning. Use a regular baking dish instead, and save your cast iron for cornbread or cobbler that’s not too sticky.
Final Thoughts
Cast iron pans are amazing — they last forever if you treat them right! But like Grandma said, they’re not for everything. Use them for frying, searing, and baking the right stuff, and they’ll reward you with perfect meals every time
